Our Process

To ensure sustainability, producers of Wagyu follow specific practices that ensure they produce the best-tasting beef. Full-blood Wagyu cattle provide great performance in the production of a delicious beef. Their purebred counterparts also produce a product is premium in quality.

Full-blood and Purebred Wagyu Beef – Full-blood Wagyu can be traced back to original Japanese cattle. If the cattle are purebred, the lineage features one non-Wagyu parent in a set of 16 great-grandparents. That makes the cattle about 94% Wagyu. Given that that percentage is an important factor here, you can breed two parents that are purebred or a full-blood bull with a percentage cow (87.5%) to achieve these results. 

A Japanese Cattle Brand – Japanese Wagyu is one of the most distinguished cattle in the world because they are associated with a premium cattle breed. Kobe beef from the Hyogo prefecture can sell for as much as $200 per steak. Therefore, Wagyu beef is considered a premium food product within and outside Japan. The beef promises a gourmet dining experience and commands a high price wherever it is served.

An Original Japanese Cattle Breed

The breeds used to produce Wagyu beef come from indigenous Japanese cows crossed with Western cattle during the early 1900s. They were selectively bred over the years to produce a beef product that features organic unsaturated fat. 

The Fat in the Beef Makes It Distinct

The fat is what gives Wagyu beefs its distinctive marbling – marbling that his high in omega-3 and omega-6 fatty acids. The beef’s taste also exudes a distinct umami flavor. Besides the genetic components, special consideration is given to the cattle’s environment, living conditions, and feed.

Grading Wagyu Beef – Japanese Style

Tender and marbled Wagyu beef is raised according to stringent guidelines – guidelines that take into the account the marbling, smell, brightness, color, firmness, and texture of the beef. Beef is graded in Japan using two scales – one for the amount of meat yielded (from class A to class B) and the other for the quality of marbling (from 1 to 5). The best Wagyu grades are A-4 or A-5.

The Japanese Black accounts for 90% of the production of Wagyu beef. The Japanese Brown (also called the Japanese Red) is produced, along with the Japanese Black, in the US.

The Wagyu Feeding Method

To ensure that Wagyu beef is outstanding, a Japanese style feeding program is established – one that is as holistic as it is sustainable. This feed program emphasizes the following:

  • Total growth management to support the nutritional needs of Wagyu cattle during each phase.
  • A specially formulated organic ration.
  • Selected feed ingredients that emphasize flavor and a healthy composition of fatty acids.
  • Feeding up to 30 months.
  • A reduction of stress.
  • Small group management.
Basic Feed Ingredients
 

Basic feed ingredients consist of grain products, such as barley and corn, and protein, such as canola or soybean meal. Soybean meal is emphasized, as it is high in lysine. Cattle are also fed by-products, such as wheat bran, okara (a by-product of soy milk), nut husks, and barley husks. Minerals are represented by limestone (to prevent the formation of kidney stones) and salt, which serves as a balance mineral.

During The Raising Process

  1. Types of Roughage – Roughage is also incorporated into a Wagyu feeding program in the form of grasses hay, alfalfa hay (which is high in vitamin A) and rice straw or wheat straw. 
  2. Abundant Marbling – By following the above feeding formula, premium cattle are produced – cattle that possess abundant marbling and a highly nutritional meat. The marbling that is produced is not greasy like other cattle fat, but presents a savory and smooth flavor instead.
  3. The Starter Feed Program – During the feeding program, the first three months feature a grazing and starter ration. Early weaning is facilitated to ensure growth and to prepare cattle for a grain feeding program. 
  4. The Middle Part of the Cattle Feeding Program – From the third month to 13 months of age, a ration plus hay is introduced to make sure cattle receive enough roughage. This feed formula is given to enhance muscle growth and develop rumen size.
  5. The Finishing Ration – The Final Phase – From 14 to 30 months, Wagyu cattle are given a finisher ration – one that restricts vitamin A consumption and optimizes feed consumption to develop marbling. This type of format allows Wagyu growers to concentrate on raising the best cattle in the world. By managing cattle by age groups and controlling ration changes, abundant marbling can be realized.
  6. Reducing Environmental Stress – Environmental stress in minimized by managing animals in feeding environments that are contained and feeding cattle in smaller groups. 

Three major components in raising premium cattle:

  • Cattle feeding is started at a young age, beginning with early weaning and supplemental nutrition necessary for calf growth. This is done to ensure muscle development and a higher beef yield at maturity.
  • Developing the rumen with high-quality roughage during post weaning (from four to nine months of age) helps in enhancing feed consumption later. Roughage consumption, during this time, increases rumen size and maintains the bacteria population in the rumen.
